What engine should i use?

455 is the best option. I doubt you'll find one in running condition, but if you want to modify it for more power, just start with a bare block anyways, and add components until it's done. You could easily get WELL over 375hp with one, even on mid grade gas, and since it's large displacement, you can get a good deal of torque too.
